Vegetable Egusi

Egusi seed is a rich source of protein and omega-6 fatty acids. Similar to most plant oils, it mainly contains unsaturated fatty acids. Its seed oil is a good source of natural antioxidants like vitamin E and ß-carotene.

Egusi seed is a good source of potassium and calcium, minerals that regulate blood pressure. It is also a rich source of magnesium, phosphorus, iron and zinc.

  1. Grind 2 cups of dry Egusi seed

  2. Grind onion and pepper mix

  3. Add the Egusi into a pot and place on medium high heat to cook for 10 min until the water dries (note- stir consistently to avoid it sticking to the bottom of the pot and burning)

  4. Add the blended pepper mix into the egusi

  5. Add palm oil and stir to combine, let it cook for another 10 min

  6. After 10min, add dry fish, precooked meat and ponmo along with it's stock, add salt to taste and maggi if necessary and allow to cook for 8min

  7. Add prewashed water leaf and ugu leaf stir it in and allow to cook for 2min
