Pounded yam with egusi soup

Pounded yam with egusi soup is a Nigerian dish eaten mostly in the western region, it taste is so delightful and it so satisfying.

  1. 1. Peel, rinse and boil your yam.
  2. 2. Using a mortar and pestle pound the yam till soft and stretchy, sprinkling the yam water at intervals, you can also use a food processor.
  3. 3. Mould into desired shape and size. Keep aside.
  4. 4. For the soup, Mix the egusi with water to form a paste.
  5. 5. Add your palm oil into the pot and fry the grinded pepper mix for 5mins, add the egusi mix gradually in ball.
  6. 6. Add your water, salt, ponmo, fried meat and seasoning.
  7. 7. Allow to cook, add in the cray fish cook for 5 more mins then finally add sliced spinach.
  8. 8. Allow it to steam for 5 mins. Ready to serve for lunch.
