PEPPER SOUP

Pepper soup is a hearty African soup made with meat, pepper soup spice, and other beautiful condiments. The different types of Nigerian pepper soup recipes depend on the protein source. There is fish, chicken,goat meat, oxtail, assorted meat (offal meat), beef, cow leg, smoked turkey etc. The pepper soup variant is named after the protein – where goat meat is used, it becomes goat meat pepper soup and so on.

  1. Wash your protein and add that to a pot. Add your blended pepper, chopped onions ,garlic and ginger give it a good mix.

  2. Add the quantity of water you need for the pepper soup, mix all the ingredients together and cover for the soup to come to a proper boil, this will also enable the protein to cook well,

  3. When the protein comes to boil , add crayfish add some vegetable oil ,like 1 cooking spoon, check for taste ,season if need be.

  4. I like to add ripe plantains my pepper soup but you can skip this part and continue from the next step.

  5. If you added plantain, allow it to cook for 10 minutes then add your chopped scent leaf

  6. Cover the pot and allow the soup cook for extra 5 minutes and your pepper soup is ready!
