OHA SOUP (using ofor)

Oha soup Nigerian delicacy from the Eastern region, it is commonly prepared by the Igbo people from an evergreen tree whose botanical name is Pterocarpus mildraedii. The main ingredient for the soup is the oha leaf, others include uziza,achi (soup thickener), meat, crayfish ,palm oil and salt.

  1. Pre cook your meat and stock fish with some seasoning, smoothly blended pepper, add some water and allow the protein to cook till it's soft.

  2. When your meat is ready add more water enough to cook the soup add blended crayfish , blended yellow pepper and uziza seeds, ore seasoning to taste and your smoked fish. Cover and allow to come to a boil.

  3. In a separate bowl mix your ofor with some palm oil ,mix smoothly.

  4. By this time the mixture has come to a boil. Go in with your ofor and oil , and gently mix till it gives that vibrant yellowish thick consistency.

  5. When your sop starts getting thick you add your sliced uziza leaves and allow to sit for 2 minutes.

  6. Now you go in with your hand cut Oha leaves and mix to combine.

  7. By this time your soup should be thick enough , take it out fire and serve.
