Jollof Macaroni

This is jollof macaroni garnished with some vegetables

  1. 1. Blend your fresh pepper with some garlic and ginger (optional)

  2. 2. Add your groundnut oil into the pot and allow to hit up a bit.

  3. 3. Add your chopped onions and fry till light pink

  4. 4. Add your tin tomatoes into the pot

  5. 5. Add your blended pepper paste, seasoning cubes, crayfish and salt to taste. Fry for about 5 minutes.

  6. 6. Make sure to stir properly and taste for salt. Add more salt if necessary.
  7. 7. Add half cup of water or just enough water to cook the macaroni into the pot.

  8. 8. Proceed to pour your macaroni into the pot. I didn't parboil mine because I don't like it being too soft. You can choose to parboil yours but if you do then, you have to reduce the amount of water you use to cook it.

  9. 9. Stir it properly to make sure the ingredients go round and taste for salt again and add if necessary.

  10. 10. Close your pot and allow to dry. Your macaroni is ready.

  11. 11. I love vegetables so I decided to garnish mine with some vegetables. This is totally optional but you'll enjoy it more like this.
