Fried plantain and egg sauce

Fried plantain is also known as “dodo”, its a popular dish that is served at home and  in some  restaurant in Nigeria.

Eggs are common protein dish, its mostly eaten fried or boiled.The fried egg in this  dish is similar to scrambled eggs but with more ingredients than an average scrambled eggs.

  1. Peal your ripe plantain and cut into bits depending on your choice ,you can add salt to the pealed plantain if you like but I didn't add salt to mine
  2. Put some cooking oil on fire depending on the quantity that will be enough for the frying ,allow to heat up for a few seconds then add the plantain into it .lower the heat to prevent burning allow to fry for about 2 minutes then it ready .
  3. cut your tomatoes and pepper and onions ,break the eggs in a bowl add a pinch of salt to the egg. Put a little quantity of cooking oil into a dry pan,place on fire add your sliced onions,tomatoes and pepper into it allow to heat up a little add some quantities of salt and season,add the egg allow to heat up for a minute and your sauce is ready.
