EGUSI SOUP (boiling method)

Egusi also known as pumpkin seed is a native to west and central Africa and is found in Ghana,Sierra Leon. In Nigeria egusi soup is cooked in different methods but i’ll be sharing  one of the most popular methods; boiling method .

  1. In a pot go in with your protein of choice, add some chopped onions, seasoning cubes, blended peppers and some water. Cover and allow to cook till it comes to a boil.

  2. When the protein has cooked till it is sift and tender ,go in with some water enough to cook the quantity of soup you need.

  3. Go in with your smoked fish

  4. Add your stock fish flakes

  6. Go in with your blended peppers and seasoning.

  7. Add some blended crayfish in generous amount, stir that in and cove r the pot to come to a very good boil.

  8. Go in with your blended egusiand give a very good stir cover to come to a boil.

  9. Go in with any vegetable of choice, I like to use Bitterleaf , properly washed bitter leaf., you can use ugwu leaf, uziza etc.

  10. Stir the vegetables in and cover to cook for 3 minutes and your egos is ready. Serve with fufu, garri, semoi etc

    This looks better that the frying methods I saw on a lot of websites, looks better too
