Boiled Plantains and fried Egg

Boiled plantain is a wonderful, starchy side dish that pairs well with any savory lunch or even breakfast which can be eaten with fried egg

  1. Place pot on medium heat, add water to the pot, wash the plantains and Cut off both ends.(Cut the plantain into 1-inch pieces). Leave to boil until soft (approx. 20 minutes) then Strain. Rinse to remove froth and Strain again. Remove the peels.

  2. Cut the fresh pepper,fresh tomatoes and onion,beat the eggs add salt and curry.heat up vegetable oil and fry the onion,Fresh pepperand fresh tomatoes.

  3. Fry for 3minutes and pour in the eggs. Stir and fry till is done. Serve with your boiled plantain.
