Boiled Plantain and Carrot Egg Sauce

Boiled Plantain and Carrot Egg Sauce

  1. Cut the plantain in three portions into a pot of water and place on the fire to boil for 12 minutes after 12 minutes drain the water
  2. Slice tomatoes into a bowl, carrots into a bowl, onions into a bowl, blend your fresh pepper and keep aside
  3. Break and whisk the eggs, add salt and whisk very well
  4. Heat the vegetable oil in a frying pan and pour in the onions. Fry the onions for 20 seconds
  5. Pour in the sliced tomatoes, and fresh pepper and fry for 5 minutes
  6. Add the seasoning cubes, curry, thyme, salt and stir very well for 5 minutes, after 5 minutes add the sliced carrots and allow to fry for another extra 5 minutes.
  7. Pour in the whisked egg and fry for 4 minutes then stir and bring down from the heat
